Whey Protein Concentrate and Whey Protein Isolate are the result of separating Sweet Dairy Whey’s natural proteins from the other natural elements found in the whey stream. Depending on the desired product, manufacturers have the capability of producing dry ingredients that contain increased protein.

Whey protein isolate provides a number of functional benefits. It is water binding, providing benefits in meat products such as sausages. It also functions as an emulsifier improving the consistency of mixed products such as ice cream, margarine and mayonnaise. Its high protein can improve gelatin products like yogurt and pudding.
