Lactose

Lactose, sometimes referred to as milk sugar, is one of the five naturally occurring ingredients found in fluid milk. When lactose is dried, the resulting powder is creamy, white in appearance and possesses a taste that is similar to powdered sugar.

Due to the ingredient's limited aftertaste, lactose has a myriad of applications in numerous industries. Some of lactose’s most intriguing functions include flavor enhancement, crystallization modification, browning ability when baked and its natural aptitude to heighten viscosity levels of the products that use this ingredient.
