Lentils

Lentils are part of the legume family of plants. They are the oldest pulse crop known and among the earliest crop domesticated in the Old World. The plant is an annual, bushy in stature, and known for its “lens-shaped” seeds. The seeds grow in pods, with usually two seeds per pod. Lentils can be consumed in many ways: soaked, germinated, cooked, fried, or baked. The most common method is as cooked lentils. Lentils cooked with the hulls attached tend to remain whole, while lentils cooked without the hull tend to disintegrate into a thick purée.
